In 1887 a lady called Pia opened a small food court where she used to sell Farinata (a pancake made with chickpeas flour), Castagnaccio (a tart made with chestnuts flour) and Focaccia (a flat oven-baked bread). It was street food for poor people who had only little money to feed themselves. During World War II the town of La Spezia was bombed and with it Pia's place too was destroyed. But the war didn't bend Pia's will, her takeaway reopened in Magenta street where pizza was sold as well. After the war the takeaway place became more and more popular when a table service was added and La Pia became a benchmark in the town of La Spezia. Although many years have passed, the recipes haven't changed: water, flour and salt.
