Dom Pérignon P2 2006 €419 In Enoteca & Ristorante.
It is the second Plénitude of an exceptional vintage. This vintage champagne, the result of a blend of Chardonnay and Pinot Noir, spent 17 years in the cellar, maturing on the lees from 2006 to 2023. Dom Pérignon P2 embodies the pinnacle of energy and complexity, in an elegantly packaged bottle.
Grapes: Chardonnay, Pinot Noir.
Aging: 17 years in the cellar, from 2006 to 2023.
Tasting notes: The color is intense gold with amber reflections. The nose reveals a rich and deep bouquet, with notes of dried fruit, sweet spices and mineral hints. On the palate it is creamy and enveloping, with a vivid, fine perlage and persistent freshness.
Pairings: Ideal to accompany elaborate fish dishes, white meats with aromatic sauces, mature cheeses and foie gras.
Why choose it: An unforgettable taste experience for true connoisseurs.
Dom Pérignon has a creative ambition: the relentless search for harmony that is a source of emotion. Every creative process has its constraints, and for Dom Pérignon it is the vintage: an absolute commitment to bear witness to the harvest of one and only one year, whatever the challenge, going so far as not to declare the vintage if necessary. Time is of the essence in the Dom Pérignon equation. It takes at least eight years of elaboration to achieve the aesthetic ideal of the House. In the darkness of the cellars, inside the bottles, the wine undergoes an active transformation in contact with the yeasts, to obtain the harmony that is the hallmark of Dom Pérignon. It is there that everything happens, with great precision, on the edge of an extraordinary balance.
The 2015 vintage, after a relatively mild winter, showed remarkable contrasts. Spring began with a cold period, quickly followed by a heat wave that lasted from mid-May to mid-August, characterized by exceptionally sunny and dry conditions. This caused water stress and variable ripening rates in different areas. August 2015 was the hottest since 1961. Fortunately, in the second half of August, rains put an end to the drought, restarting the ripening process. The harvest began on September 7, under favorable sunshine. The excellent health of the grapes allowed for an ideal harvest cycle for almost three weeks. The tasting of the grapes revealed an extraordinary generosity, without excess.
Dom Pérignon Vintage 2015 on the nose Initially a little dark, with toasted notes and cocoa powder. The nose then gradually opens up, like a floral bouquet. Lime leaves, jasmine and finally peony, highlighting the spicy dimension of the wine, with anise and cardamom. A vegetal and fruity freshness massages the overall sensation with chlorophyll, orange peel and green papaya. On the palate it is broad and horizontal. It spreads on the palate, delicate then generous. Tactile. It caresses and stimulates at the same time, more on the sides of the tongue than on the tip. Fresh peach pulp and nectarine envelop sculpted bitter notes of citrus and gentian.
The 2013 Dom Ruinart Blanc de Blancs is made exclusively with Chardonnay grapes from Grand Cru and Premier Cru vineyards, 70% from the Côte des Blancs (Le Mesnil-sur-Oger, Avize, Chouilly and Bergères-lès-Vertus) and 30% from the Montagne de Reims (Vernezay, Sillery, Taissy, Villers-Marmery). Present in all the cuvées of the Maison Ruinart, this emblematic grape variety reflects the rich diversity of the terroirs of the Champagne region.
Champagne Krug Grande Cuvée is the ultimate expression of Krug's philosophy, based on craftsmanship and savoir-faire: a blend of 120 wines from over ten different vintages. Its extraordinary finesse is due to a rest of at least six more years in the cellars. It takes over twenty years to create a bottle of Krug Grande Cuvée: the first Cuvée de Prestige recreated each year, and which goes beyond the concept of a vintage.
This bottle left the Krug cellars and received the cork in winter 2023. It is the last stage, after more than 7 years of aging in the cellars to acquire refinement and elegance.
This bottle, Grande Cuvée 172ème Édition, is an extraordinary blend of 146 wines from 11 different vintages, the oldest being from 1998 and the youngest from 2016. To complete the wines of this vintage, the House drew on its wide range of reserve wines, carefully selecting them to make up 42% of the final blend.
Krug Grande Cuvée 172ème Édition was born from the 2016 harvest, a year marked by extremely contrasting weather conditions, almost a parody of the climatic pendulum. The spring was particularly wet, with 70% more rainfall than average between April and June, creating difficulties in the vines and increasing disease pressure. However, from flowering onwards, the climate improved, allowing the vineyard to recover and concluding with a heat wave towards the end of ripening. The long harvest, which took place from September 9th to October 2nd, led to the collection of healthy grapes and the production of wines of great character and expression, regardless of the variety or origin of the grapes.
Created from the 2016 harvest, Krug Rosé 28ème Édition is a blend of 32 wines from 6 different vintages, the youngest of which dates back to 2016 and the oldest to 2010.
Overall, the reserve wines from the House's extensive collection make up 38% of the final blend for this edition of Krug Rosé.
The final composition of this bottle of Krug Rosé is: 58% Pinot Noir, including 10% traditionally ground Pinot Noir, 25% Chardonnay and 17% Meunier.
A perfect reflection of the magnificent contrasts of a climate full of paradoxes, Krug 2011 is the expression of an unpredictable year divided in two, with inverted seasons. A surprising story told by Krug that combines refinement and power, it was nicknamed “Vivacious Roundness” by the Tasting Committee.
Krug 2011 is a fascinating blend of extraordinary freshness of Pinot Noir (46%), Chardonnay (37%) and Meunier (17%).
Founded in 1729, Ruinart is the oldest champagne house in the world. The origin of it all is the Benedictine monk Dom Thierry Ruinart, who understood the potential of that wine – then called “vin de bulles” (wine with bubbles) – so popular in the French aristocratic salons at the time of King Louis XIV. However, it was his nephew, a cloth merchant, Nicolas Ruinart, who crowned the monk’s idea and brought it to life, creating the Ruinart company.
Ruinart was founded the year after Louis XV’s edict, which authorized the transport of wine in bottles. Before this edict, wine could only be transported in barrels, which made it impossible to send champagne to distant markets, and limited consumption mainly to its production area.
In 1768, the Maison purchased the Crayères, Gallo-Roman chalk quarries dug 38 meters deep under the city of Reims that guarantee a total absence of vibrations and constant temperature and humidity conditions, ideal for the fermentation and maturation of the Ruinart cuvées.
Ruinart Blanc de Blancs is a great classic in the prestigious world of Champagne, produced exclusively with Chardonnay grapes, from the Côte des Blancs and the Montagne de Reims, and Sézanne grapes. The former bring a certain aromatic finesse, the latter are known for the roundness they are capable of bringing.
This champagne perfectly represents the intact purity of Chardonnay which, after being fermented at a controlled temperature, is aged on the lees for 36 months.
On the nose it opens with an intense fruity bouquet, with hints of white peach and citrus, enriched by pleasant floral aromas. On the palate it is pleasantly fresh and balanced, with a round and silky finish.
Perfect to accompany seafood and shellfish, it is ideal when paired with raw fish.
Ruinart Rosé is born from the assembly elaborated on a base of Chardonnay and Pinot Noir mostly classified among the Premiers Crus, with a share of 20 to 25% of vins de resérve from the two previous years. Composed of 45% Chardonnay from the Côte des Blancs and the Montagne de Reims and 55% Pinot Noir from the Montagne de Reims and the Marne Valley, of which 18-19% is vinified in red.
The color is a delicate garnet pink with slightly orange reflections. The effervescence is lively and light, with a persistent perlage. It presents itself to the nose as fresh and delicate, initially offering a palette of exotic fruits (guava, lychee) and small red fruits (raspberry, cherry, wild strawberry). The notes of rose and pomegranate complete the complex and intense aromatic profile, dominated by primary aromas that are not excessively affirmed.
The attack on the palate is clear and full, enlivened by a sweet effervescence. The aromas of freshly picked red fruits are fully expressed. In this balance, a delicious roundness and a pleasant freshness are combined, which is expressed with an elegant and invigorating touch of mint and pink grapefruit.

Classic Method Bolzano
The Spumante Metodo Classico Brut Alto Adige DOC from the Haderburg winery best represents the viticulture of these lands. For this label, the focus is on a blend with a prevalence of Chardonnay grapes (85%) and a smaller percentage, equal to 15%, of Pinot Noir grapes. The vines are located on the reliefs of the Hausmannhof plot, where the substrate has high percentages of limestone and clay. Organic cultivation ends with the harvest, which involves careful manual selection of the healthiest bunches. The vinification involves an initial fermentation inside latest-generation steel tanks. In line with the Classic Method, the wine then ages for two years on the yeasts during the second fermentation phase in the bottle, which culminates with disgorgement and the addition of a small amount of "liqueur d'expedition". Perfect immediately after being put on the market, Spumante Metodo Classico Brut Alto Adige DOC can also rest in the cellar for two to three years.

Fragrances of small fruits for a rich and enveloping Trentodoc, a happy synthesis of Pinot Noir and mountain Chardonnay. In the glass, the pink reflections of the bubbles accompany the entire banquet. A bubble of great elegance and versatility.
The quintessence of the Perlé style. It is born from the selection of Chardonnay cuvées that boast the greatest aging potential. It seduces with its complexity and refined softness. It owes its name to the talent of Giulio Ferrari, who at the beginning of 1900, decided to give this prestigious selection a name that recalled the adjective “sparkling”. Trento at the time was part of the Austro-Hungarian Empire, which is why, from the translation of “perlend”, the Perlé was born

HARVEST 2015
2015 is a year that has guaranteed a warm and dry course in its progressive progress. Good weather accompanied the initial flowering, which then led, thanks to a balanced rainfall in the spring months, to a regular development of the vines. The following summer, particularly hot and marked by little rainfall, favored on the one hand the ripening of particularly healthy grapes, on the other, made it necessary to intervene, especially in the low hill vineyards, with irrigation to support the plants. When it came to the days of the harvest, the harvest was concentrated in a very short period of time; to confirm that, from a qualitative point of view, the altimetric factor was decisive in defining the value of the grapes, a special mention must be given to the fruits of the medium and high hill vineyards.
2012 was an unusual year, with hot months alternating with cold weeks, starting in spring. From May onwards, the weather was stable. There was no shortage of summer hailstorms, as well as days of great August heat, which decreed the beginning of the harvest on August 21st, an average date. The harvest, completed in a very short period of time, involved a careful selection of the bunches to guarantee the highest quality of the wines.

2006 VINTAGE
An excellent vintage for minerality, expressiveness and finesse of the mountain grapes. The prolonged winter cold gave way to exceptionally hot and dry temperatures between spring and summer. The abundant rains in August replenished the water reserves, which were essential for the grapes ripening at high altitude to reach their best aromatic identity.

2005 VINTAGE
The delayed growing season and the hot summer until August culminated in the pre-harvest rains that also recorded pronounced temperature variations, excellent for a good ripening of the mountain grapes. Although the harvest was quantitatively lower than average, the quality of the mountain Chardonnay was, however, very good, particularly for the balance between acidity and aromatic charge.

Trento DOC 100% Chardonnay Brut Nature Riserva 36 months, capable of expressing the spirit of Trentino through the range of the five senses: from the fine minerality of the aroma, to the smooth rockiness on the palate, up to the touch and sight of a packaging that tells the refined complexity of the mother rock that nourished it.
Fermentation takes place in open stainless steel vats for 15 days in slow maceration with part of the whole grapes. Produced with indigenous yeasts. Without the use of chemicals in any phase of the work process. The freshly fermented wine is placed in steel vats where it matures and slowly absorbs aromas and fragrances from its natural deposit. The wine remains in the barrels for 6 months and is then bottled for the second fermentation called "refermentation". It then rests for 4 months in the bottle. In this way it maintains all the characteristics of the grape variety. After bottling, the wine is stored in a temperature-controlled environment until it is released onto the market.
Franciacorta Saten by 1701 is a creamy and dynamic sparkling wine, evidence of the constant growth of a small artisan company. It is not easy in a highly productive area like Franciacorta to decide to make wine for passion, focusing on low yields and small plots of land. The guys at 1701 decided to undertake this "crazy" project, having had 4 hectares at their disposal for several centuries in the well-known area dedicated to the classic method and deciding to convert them entirely to the precepts of biodynamics. The first local winery to make such a clear choice, that of 1701 is a story of increasingly convincing and complete liquids, until it has established itself as one of the most interesting and qualitative realities in the area. Just 50,000 bottles in total, intended for enthusiasts or those seeking vibrant and authentic experiences.
Franciacorta Saten sparkling wine by 1701 is obtained from pure Chardonnay grapes, grown in the well-known area in the province of Brescia. In the vineyard, to obtain healthy and qualitatively perfect fruit, the precepts of biodynamics are followed, while the harvest is done exclusively by hand with careful selection of the bunches right from the vineyard. After extremely delicate destemming, the first fermentation takes place in steel containers, thanks to the action of indigenous yeasts and the preparation of a pied de cuve. Each vineyard is vinified separately and assembled for refermentation in the bottle. In the case of Saten, it is aged on the lees for 30 months.
The Franciacorta Saten wine reveals itself in the glass with a straw yellow color and extremely fine and persistent perlage. From the first smell it makes you understand that it has many arrows in its bow, for a nose of great breadth and complexity: small pastries, clarified butter, almonds and hazelnuts, as well as hints of golden apple. A true hymn to finesse, the liquid gives its best when tasted, where it combines creaminess with a refined savoury backbone that significantly lengthens the sip. Ductile and chameleonic, it is a wine that accompanies appetizers, main courses and fish-based first courses.
Franciacorta Rosé Millesimato di 1701 was born in Lombardy in the heart of Franciacorta, precisely in Cazzago San Martino in the province of Brescia. The winery is owned by two brothers who, driven by their passion for the world of wine, purchased the farm from the Counts Bettoni Cazzago with the aim of producing quality wines without forgetting tradition. The name "1701" comes from the first vintage of a wine produced by the "Brolo", an ancient vineyard protected by walls dating back to the 11th century.
The pure Pinot Noir grapes of Franciacorta Rosé Millesimato di 1701 come from the "Collina" vineyard which is favorably exposed to sunlight, a condition that favors the richness of antonciani grapes for perfect maceration on the skins. The moraine soils with skeletons in depth that give mineral hints to the wines with deposits of clay and silt more on the surface. The vineyards overlook the beautiful Lake Iseo whose influence guarantees mild temperatures in summer and winter, perpetuating an excellent ripening of the grapes. The vines are entirely cultivated with biodynamic regime, a choice that has helped to create a favorable ecosystem that respects the raw material. The harvest is manual; a short maceration on the grapes and a fermentation with indigenous yeasts follows; it rests on the yeasts for at least 30 months.
The Franciacorta Rosé Millesimato di 1701 presents itself in the glass with an antique pink color with bright reflections; its perlage is fine and pleasantly persistent. On the nose, lively aromas of red fruits are perceived with floral sensations and light toasted notes on the finish; on the palate it is crunchy, fresh with a good dose of mineral hints with a balanced finish that resists lively, inviting the drink. It is recommended in combination with grilled fish dishes, but also raw; interesting with fresh cheeses and pizza. A pleasant wine for fresh summer aperitifs in the company of old friends or for fish grills by the sea with a product with unexpected sensations that expresses the potential of a land that provides great wines revisited looking to the future
Franciacorta Brut Nature 1701 is a creamy, dry and persuasive bubble, classic method obtained from grapes grown following the dictates of biodynamics. Yes, because the 1701 winery, located in the Cazzago San Martino area, holds a record, that of being the first winery in Franciacorta that is inspired by the biodynamics of Rudolf Steiner and the results are truly surprising or perhaps just the worthy consequence of serious and loving work. Over three centuries of history in Franciacorta, with an approach in the vineyard that bans the use of any chemical or synthetic substance, while in the cellar they continue with the spontaneous fermentation of the base wines and refinements on the yeasts, even quite long ones. Expressive originality and uniqueness are the cornerstones on which the company philosophy is based and in the glass the wines speak, or rather tell!
The 1701 Brut Nature is a Classic Method obtained from a blend consisting mainly of Chardonnay and a small balance of Pinot Noir, from vineyards grown in the Franciacorta area. A few hectares of vineyards, only four, which involve manual selection and harvesting of the grapes, with subsequent destemming and crushing and first fermentation that occurs spontaneously in steel containers, with a pied de cuvée of indigenous yeasts. The second fermentation takes place in the bottle, as is usual in classic methods. The refinement lasts 30 months on the yeasts.

Annamaria Clementi Rosé is the ultimate expression of pure Pinot Noir vinified as a rosé, in the Ca’ del Bosco style.
The grapes are hand-picked in small crates, coded and cooled in cold storage. Each bunch is selected by expert eyes and hands, and then benefits from a special washing and hydromassage system for the bunches, using three soaking tanks and a system for complete drying.
For destemming, the bunches are transferred over the vat and then fall into it by gravity, thus eliminating traditional pumping systems, which cause the skins to break and unwanted herbaceous notes. This is followed by a brief maceration of the grapes at a temperature of 14°C to obtain that particular intense pink color and that aromatic profile of extreme finesse and harmony that will characterize the Annamaria Clementi Rosé in the bottle.
All the winemaking phases take place in small oak barrels obtained from selected woods and seasoned for at least 3 years and stored in deep and cool underground cellars. Alcoholic fermentation, malolactic fermentation and barrel aging last a total of 8 months.
Annamaria Clementi Rosé is born from the art of knowing how to assemble base wines from the 3 historic vineyards, selecting only the wine from the best barrels. It is drawn off by gravity and a pair of flying tanks transfers it by gravity from the barrels to the assembly tank. At least another 8 years of aging on the yeasts are needed to achieve that olfactory harmony and that excellent taste balance that make Annamaria Clementi Rosé a supreme Franciacorta.
Dégorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Ca' del Bosco, which avoids oxidative shock and further additions of sulphites and makes our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is marked uniquely to ensure traceability.

Franciacorta
Derived from the French concept of “Blanc de blanc” (wine produced only with white grapes) and “Crémant” (bubbles produced under less pressure, making the foam very soft and abundant), this type of bubbles, with a light, fresh and delicate taste, was adopted by the Consorzio Vini Franciacorta in the 80s with the name of “Satèn”, to indicate the silkiness of the taste and the freshness of the sensory notes. Contadi Castaldi, a company of the Terra Moretti group, has made Satèn a true corporate style, reaching more than 15% of the total production of Satèn in Franciacorta, covered by the current 80 producers.
The Soul Satèn, in the 2000 harvest, summarizes all the distinctive traits of the Satèn typology: harmony and finesse in a silky and velvety soul.

Pavia, Easter Eve 572. Alboin, king of the Lombards, managed to enter the city after 3 years of a very hard siege. The people of Pavia, fearing a ruthless revenge, tried to ingratiate themselves with the new sovereign and offered him gold, jewels and 12 beautiful virgins. An old baker added a dove-shaped cake to the gifts, begging the king, given the imminence of Easter, to spare the people of Pavia and respect the doves, a symbol of peace. The sovereign agreed to the strange request, but soon realized that he had been tricked: when he began to ask the girls their names, they all said they were called Colomba. Despite this, Alboin kept his word.

Ribolla Gialla Riserva is a deep, macerated white wine produced by Slavcek, one of the oldest and most established wineries in Slovenia. We are in Potok, where Frank and Alenka Vodopivec cultivate with passion and love native vines with great expressiveness and character like this Ribolla Gialla, unconventional and with a strong personality. The vineyards are surrounded and protected by woods and green expanses, touched, during the day, by the warm sea breezes coming from the Adriatic that transform into stiffer breezes at night, thus creating a strong temperature range. The result is intense, juicy and fresh grapes that give labels of great character.
Slavcek Riserva is obtained from pure grapes that ripen on marly soils, particularly suitable for the wine production of Collio. The 25-year-old vines do not see any type of chemical treatment; they are respected and treated according to the precepts of organic farming, using only natural fertilizers and green manures to nourish the plants. Only in this way will healthy and genuine bunches grow that best represent the territory of origin. After harvesting, the grapes macerate on the skins for 20 days, extracting flavor, depth and nuances. characterized by a dry and generally hot climate.
Budding was regular while the rains and low
temperatures of the months of May and June caused a delay in

harvest for Vivia began with the Viognier in the first week of
September, continued with the Vermentino, and concluded with the
Ansonica harvest in the penultimate week of the month.

temperature of 10 °C for about 24 hours in order to promote its natural
clarification; it was subsequently transferred to stainless steel
tanks, where alcoholic fermentation took place at a controlled
temperature of 16 °C. Vivia aged for a short period in steel in
contact with its own yeasts for about 3 months before being bottled
in January 2025.

It is a native grape, grown mainly in the Prepotto area, in the province of Udine, which gives birth to a red with a unique and rare character. It grows in a particularly fertile territory, with an optimal climate, mitigated by the presence of the Julian Prealps, which shelter it from the cold northern winds, and by the proximity to the Adriatic Sea. Its distinctive bouquet of raspberry, blueberry and wild blackberry is completed with aging, giving increasingly intense notes of black pepper. A great red from Friuli, a beautiful rediscovery of an ancient and forgotten vine.
Very intense ruby color, the nose is complex and concentrated, with hints of red fruit, small berries, ripe plum, black cherry and spices. In the mouth it is typical, powerful, elegant, balanced, with a finish of ripe cherry.
Barbaresco Gaja is produced following rigorous selections of grapes from 14 different vineyards located between Barbaresco and Treiso. The Winery
Founded in 1859 by Giovanni Gaja in the Langhe, the Gaja winery is now a point of reference in the production of Barbaresco. Passionately led by Angelo Gaja and his children Gaia, Rossana and Giovanni, the company stands out nationally and internationally for its innovation in production techniques, without ever losing its connection with tradition and the territory, one of the most suited to excellent viticulture.
Barbaresco Riserva Rabajà is one of the flagship labels of Castello di
Verduno, an ancient winery rich in history and traditions of the Langhe area. It is
an elegant and complex wine, which expresses the refined finesse typical of
Nebbiolo grown in the famous Rabajà cru. It is a classic version,
made with aging in large barrels, according to local customs.
A choice that allows to combine the pleasantness of the fruit and the
aromatic evolutions of the wine, without weighing them down with notes of wood. It is a
multifaceted Barbaresco, long and persistent, excellent to drink immediately, but which does not fear long
aging. Riserva Barbaresco Rabajà is produced by a
prominent name in the Langhe panorama. Castello di Verduno, since the
first half of the nineteenth century has been linked to the production of the great reds of this
splendid corner of Piedmont. Today it manages vineyards in the Verduno area and in the
territory of the Barbaresco denomination. The vineyards of the highly regarded Rabajà cru are
located at 300 meters above sea level and face southwest. They
are grown on particularly suitable lands, the famous “Marne di Sant’Agata”.
Rabajà Barbaresco Riserva is produced with the best grapes from the
vineyards grown in the territory of the Rabajà Additional Geographical Indication, which
is located southeast of the village of Barbaresco. Fermentation takes place in
wooden vats, with a period of maceration on the skins of about 40 days. The wine
matures for 20 months in large Slovenian oak barrels and 2 months in
steel tanks, before being bottled without filtration and clarification. In the glass it
has a bright garnet red color, with a bouquet that recalls
floral scents of violet, aromas of raspberries, redcurrants and berries, hints of
licorice, aromatic herbs and delicate spices. On the palate it is medium-bodied, with
intense aromas, fine and evolved tannins, with a fresh and persistent finish. (14.5%)
Teroldego is the symbol of Trentino winemaking, known in ancient times as “the gold of Tyrol”. In fact, among the various hypotheses put forward, it seems that its name derives from Tyrol, the border land where it has always been grown. It is a native red grape considered the ancient king of the region, since its presence is already documented in 1300 in the Piana Rotaliana area, an alluvial area where its presence is still concentrated, located on the northern border with Alto Adige. Dark and deep red in color, it is characterized by a bouquet of berries, accompanied by spicy and balsamic sensations. On the palate it is meaty, round and enveloping and pairs perfectly with typical dishes of the Trentino tradition and beyond: cured meats, meats and mature cheeses. The red nectar of Trentino, the glory of the region.
Vinified for the first time with the 1975 harvest, it is in the genetic heritage of the rural tradition of the area, where it has always been produced. Commonly called “burdonsì magher”, it is yet another testimony to the authentic historical vocation for the production of black grapes. Grown with the original name of Franciacorta Rosso DOC, it was later called Terre di Franciacorta and then Curtefranca Rosso. With the 2016 vintage it takes the name Corte del Lupo. These two terms are well told by the new label that contains the essence of the terroir and legitimises the winemaking quality of Ca’ del Bosco: the vineyard, the Court, the embrace of the forest and the wolves, faithful guardians of the domain.

Masi’s Amarone Classico “Costasera” is unequivocally recognized
as a point of reference for this type of wine, if not even among the
great Italian reds. Amarone Classico is obtained by the technique
of drying the grapes during the first winter months, now a hallmark of the
winery thanks to the notable studies carried out by its technicians, which leads the bunches to
be delicately laid out in traditional drying rooms on bamboo racks,
which guarantee greater ventilation between the bunches. This ancient
technique ensures that the grapes concentrate sugars and ideal substances to the best
and evolve their aromatic characteristics. When the fruits are considered ready
they are pressed and the alcoholic fermentation begins, carried out slowly and
for a long time at the low natural temperature of the winter months. The wine thus obtained
ages for 24 months mostly in Slovenian oak barrels.
Masi "Costasera" is an intense ruby red, dense and oily.
The nose reveals engaging notes of almost cooked fruit, in some nuances it is
almost toasted, subtly spicy. On the palate it is balanced but at the same time
inebriates the drink, from the ever-present tannin, a juicy fruit is recognized,
it closes in a rich and persistent way. Symbol, proud and exuberant.
Notes of plum and cooked cherry with roasted coffee.
Balanced and round, warm, tannic and fruity.
“Bonacosta” is Masi’s Valpolicella Classico.
Simplicity and elegance coexist in Masi’s “Bonacosta”, which is defined by
finesse and pleasantness. It speaks of everyday life, easy drinking and fragrance,
with that easily recognizable Venetian accent.
Masi’s vineyards are located among the hills north of Verona,
protected by the preceding Alpine chain and benefiting from the lacustrine influence of
Lake Garda. Alcoholic fermentation in steel.
Ruby. The nose reveals itself, right from the start, as broad and pleasantly intense; in particular, hints of cherry and black cherry, notes of vanilla and hints of chocolate stand out. On the palate it is decisive, with a beautiful silkiness and a long persistence.
Sassicaia is undoubtedly one of the most famous Italian wines in the world. It comes
from a particularly suitable 75-hectare vineyard, where the plots
have different characteristics, with limestone formations and a high stony content,
a peculiarity from which the toponym "sassicaia" probably derives. The
exposure of the land is west and south-west. Fermentation takes place in steel, at
controlled temperature, with maceration on the skins for about 10 days.
The refinement of the Bolgheri Sassicaia DOC of Tenuta San Guido takes place in
French oak barriques, for 24 months, with subsequent aging in the bottle.
To the eye, the wine has an intense ruby red color. On the nose it expresses itself on
hints of ripe red fruits, berries and cola, aromatic herbs and toasted

fruit such as cherry in alcohol, black cherry, raspberry and plum alternate with delicate spicy hints of clove and licorice; sweet balsamic sensations of mint and chocolate complete the complex bouquet. On the palate it is rich, enveloping and vibrant with soft and velvety tannins. The finish is long and persistent aftertaste, where the notes perceived on the nose return.
Morellino di Scansano DOCG is a Tuscan red wine that is allowed to be produced in part of the province of Grosseto. It has a ruby red or garnet color with aging; the aroma is intense, ethereal and vinous, with notes of black fruits, morello cherry and plum; the flavor is warm and dry, not too tannic.
Intense ruby red, with a slightly garnet edge. Complex aromas reach the nose, recalling first of all dark berry fruit, overripe and jammy, then leaving room for mineral and spicy hints of licorice and tobacco. In the mouth the tannins, although still energetic, prove to be well chiseled. Warm tasting and excellent persistence.
Obtained from the best plots and a careful selection of the harvested grapes, the Riserva Villa Cerna is one of the wines that best tells the bond between the Cecchi family and its place of choice: Castellina in Chianti. Deep in olfactory expression with dried flowers, red fruit and spice for a material of splendid finesse played on the contrast between the acidic backbone and the power of the fruit. A perfect balance capable of evolving over time.

Lambrusco Reggiano 'Quercioli' by Ermete Medici is a sparkling red wine resulting from a careful selection of Lambrusco Salamino and Marani grapes. A wine to accompany Emilian cuisine dishes, such as a platter of parmesan and raw ham, or tortelli with herbs
For those who love to be amazed by unique and hard to imitate wines, this
Phermento is - without excuses - the right bottle to choose. Let's start
with the simple things. Phermento by Medici Ermete is a Lambrusco di
Sorbara DOC, dry. But don't expect the classic "lambruschino"
all color and little value. This, in fact, is a particular Lambrusco
produced with the technique of refermentation in the bottle. And it is rosé.
So careful vinification of the Lambrusco di Sorbara grapes in rosé
and second fermentation in the bottle, without providing for the final disgorgement. The
yeasts used for the sparkling process remain in the bottle and
continue to work, slowly, until the moment of uncorking.
It is no coincidence that this bottle is not closed with the
classic mushroom cork, but with a crown cap that guarantees an
extra seal. It is certainly not a wine destined for long
aging in the cellar but, that said, if we have the perseverance to
buy more than one bottle, every time we decide to uncork it
we will discover a slightly different wine. Magic? No, simple
oenology! The power of yeasts.
Medici Ermete is a historic reality of Emilia Romagna. Since its
birth it has set itself an ambitious goal: to produce the best
Lambrusco possible. And it does so, consistently, year after year,
harvest after harvest, thanks to rigorous control of the entire
production chain. From the vineyard, one might say, to the bottle, where
it always manages to put fresh, versatile, very gastronomic wines and
with an innovative approach. So very low yields, well
below what is foreseen by the regulations, viticulture that respects
nature and, obviously, super accurate winemaking, thanks to constantly
updated systems. This is how high-quality wines are born, from Lambrusco
to Malvasia. Now in its fifth generation, the
Medici family has managed to expand to the point where it can now count on almost 80
hectares of vineyards divided into 5 estates in the territories best suited to the
production of Lambrusco (four in Reggio Emilia and one in Modena),
but above all to bring its wines to more than 70 countries around the world.
