Dom Pérignon P2 2006 €419 At the Wine Shop & Restaurant.
This is the second Plénitude of an exceptional vintage. This vintage champagne, a blend of Chardonnay and Pinot Noir, spent 17 years in the cellar, aging on the lees from 2006 to 2023. Dom Pérignon P2 embodies the pinnacle of energy and complexity, presented in an elegantly packaged bottle.
Grape Variety: Chardonnay, Pinot Noir.
Aging: 17 years in the cellar, from 2006 to 2023.
Tasting Notes: The color is intense gold with amber highlights. The nose reveals a rich and deep bouquet, with notes of dried fruit, sweet spices, and mineral hints. On the palate, it is creamy and enveloping, with a vivid, fine perlage and persistent freshness.
Pairings: Ideal with elaborate fish dishes, white meats with aromatic sauces, aged cheeses, and foie gras.
Why choose it: An unforgettable taste experience for true connoisseurs.
Dom Pérignon has a creative ambition: the relentless pursuit of harmony that inspires emotion. Every creative process has its constraints, and for Dom Pérignon, it's the vintage: an absolute commitment to witnessing the harvest of one and only one year, whatever the challenges, even going so far as not to declare a vintage if necessary. Time is crucial in the Dom Pérignon equation. It takes at least eight years of development to achieve the Maison's aesthetic ideal. In the darkness of the cellars, inside the bottles, the wine undergoes an active transformation on the lees, achieving the harmony that is the hallmark of Dom Pérignon. It is there that everything happens, with great precision, on the edge of extraordinary balance.
The 2015 vintage, after a relatively mild winter, showed remarkable contrasts. Spring began with a cold spell, quickly followed by a prolonged heat wave from mid-May to mid-August, characterized by exceptionally sunny and dry conditions. This caused water stress and variable ripening rates in different areas. August 2015 was the hottest since 1961. Fortunately, rains put an end to the drought in the second half of August, restarting the ripening process. The harvest began on September 7th, under favorable sunshine. The excellent health of the grapes allowed for an ideal harvest cycle lasting nearly three weeks. The tasting revealed an extraordinary generosity, without excess.
Dom Pérignon Vintage 2015 on the nose: Initially a little dark, with toasted notes and cocoa powder. The nose then gradually opens up, like a floral bouquet. Lime leaves, jasmine, and finally peony, highlight the spicy dimension of the wine, with anise and cardamom. A vegetal and fruity freshness massages the overall sensation with chlorophyll, orange peel, and green papaya. On the palate, it is broad and horizontal. It spreads across the palate, delicate then generous. Tactile. It caresses and stimulates at the same time, more on the sides of the tongue than the tip. Fresh peach pulp and nectarine envelop sculpted bitter notes of citrus and gentian.
The 2013 Dom Ruinart Blanc de Blancs is made exclusively with Chardonnay grapes from Grand Cru and Premier Cru vineyards, 70% from the Côte des Blancs (Le Mesnil-sur-Oger, Avize, Chouilly, and Bergères-lès-Vertus) and 30% from the Montagne de Reims (Vernezay, Sillery, Taissy, and Villers-Marmery). Present in all of Maison Ruinart's cuvées, this emblematic grape variety reflects the rich diversity of the Champagne region's terroirs.
Krug Grande Cuvée Champagne represents the ultimate expression of the Krug philosophy, founded on craftsmanship and savoir-faire: a blend of 120 wines from over ten different vintages. Its extraordinary finesse is due to a minimum of six additional years of cellar aging. It takes over twenty years to create a bottle of Krug Grande Cuvée: the first Prestige Cuvée recreated annually, which transcends the concept of a vintage.
This bottle left the Krug cellars and was corked in winter 2023. This is the final stage, after more than seven years of cellar aging to achieve refinement and elegance.
This bottle, Grande Cuvée 172ème Édition, is an extraordinary blend of 146 wines from 11 different vintages, the oldest from 1998 and the youngest from 2016. To complement this vintage's wines, the House drew on its extensive portfolio of reserve wines, carefully selecting them to constitute 42% of the final blend.
Krug Grande Cuvée 172ème Édition is born from the 2016 harvest, a year marked by extremely contrasting weather conditions, almost a parody of the climatic pendulum. Spring was particularly wet, with rainfall 70% higher than average between April and June, creating difficulties in the vineyards and increasing disease pressure. However, starting with flowering, the climate improved, allowing the vineyard to recover and culminating in a heat wave towards the end of ripening. The long harvest, which took place from September 9th to October 2nd, resulted in the harvest of healthy grapes and the production of wines of great character and expression, regardless of the grape variety or origin.
Created from the 2016 harvest, Krug Rosé 28ème Édition is a blend of 32 wines from six different vintages, the youngest dating back to 2016 and the oldest to 2010.
Overall, reserve wines from the House's extensive collection make up 38% of the final blend for this edition of Krug Rosé.
The final composition of this bottle of Krug Rosé is: 58% Pinot Noir, including 10% traditionally milled Pinot Noir, 25% Chardonnay, and 17% Meunier.
A perfect reflection of the magnificent contrasts of a climate rich in paradoxes, Krug 2011 is the expression of an unpredictable year divided in two, with inverted seasons. A surprising story told by Krug, combining refinement and power, it was dubbed "Vivacious Roundness" by the Tasting Committee.
Krug 2011 is a fascinating blend of extraordinary freshness: Pinot Noir (46%), Chardonnay (37%), and Meunier (17%).
Founded in 1729, Ruinart is the oldest champagne house in the world. It all began with the Benedictine monk Dom Thierry Ruinart, who recognized the potential of this wine—then called "vin de bulles" (sparkling wine)—so popular in the French aristocratic salons of the time of King Louis XIV. However, it was his nephew, a cloth merchant, Nicolas Ruinart, who realized the monk's vision and brought it to life, creating the Ruinart company.
Ruinart was founded the year after Louis XV's edict, which authorized the transport of bottled wine. Before this edict, wine could only be transported in barrels, which made it impossible to ship champagne to distant markets and limited consumption primarily to its production area.
In 1768, the Maison purchased the Crayères, Gallo-Roman chalk quarries excavated 38 meters beneath the city of Reims. These quarries guarantee a complete absence of vibrations and constant temperature and humidity, ideal for the fermentation and maturation of Ruinart cuvées.
Ruinart Blanc de Blancs is a great classic in the prestigious world of Champagne, produced exclusively from Chardonnay grapes, sourced from the Côte des Blancs and Montagne de Reims, and Sézanne grapes. The former contribute a certain aromatic finesse, while the latter are renowned for their rounded character.
This champagne perfectly represents the intact purity of Chardonnay, which, after being fermented at a controlled temperature, is aged on the lees for 36 months.
The nose opens with an intense fruity bouquet, with hints of white peach and citrus, enriched by pleasant floral aromas. On the palate, it is pleasantly fresh and balanced, with a rounded and silky finish.
Perfect to accompany seafood and shellfish, it is ideal when paired with raw fish.
Ruinart Rosé is a blend of Chardonnay and Pinot Noir, mostly classified as Premier Crus, with 20% to 25% reserve wines from the two previous vintages. It is composed of 45% Chardonnay from the Côte des Blancs and Montagne de Reims and 55% Pinot Noir from the Montagne de Reims and the Marne Valley, of which 18% to 19% is vinified as red wine.
The color is a delicate garnet pink with light orange highlights. The effervescence is lively and light, with a persistent perlage. The nose is fresh and delicate, initially offering a palette of exotic fruits (guava, lychee) and small red fruits (raspberry, cherry, wild strawberry). Notes of rose and pomegranate complete the complex and intense aromatic profile, dominated by primary aromas that are not overly assertive.
On tasting, the attack is crisp and full, enlivened by a sweet effervescence. The aromas of freshly picked red fruits are fully expressed. This balance combines a delicious roundness and a pleasant freshness, expressed with an elegant and invigorating touch of mint and pink grapefruit.
The 2012 Esprit Couture Collet Champagne is a rare blend of 11 Premier and Grand Crus selected in 2012. 60% Chardonnay from Grand Cru villages such as Avize, Chouilly, and Cramant contributes to the freshness, crispness, and elegance of Esprit Couture.
The vinification and aging of the Chardonnay in Champagne oak barrels allows its brioche aromas to fully develop. 40% Pinot Noir, sourced from iconic Grand Crus such as Aÿ, Mailly-Champagne, and Verzy, gives the wine structure, smoothness, and tenderness.
The 2012 Esprit Couture Collet is a unique Champagne with exceptional complexity. It opens with buttery notes, toasted notes like hazelnut, followed by cardamom, lime, and verbena. Other aromas emerge, including apricot, blackcurrant, plum, and biscuit, with accents of nougat, pineapple, and toast.
On the palate, it is smooth, fresh, and fruity, supported by an acidity reminiscent of lemon.
The mid-palate is orchestrated by a chalky minerality that provides a crisp, salty finish. The fruity and mineral notes are finely interwoven and are carried by a smoothness of citrus and exotic fruit. The finish is fluid and envelops the palate with a silky, light texture.
The Cuvée Réserve Exclusive Brut is an airy, dynamic, and fresh champagne, with a frank and expressive fruitiness, brought to life by a beautiful maturity thanks to extended cellar aging, which has allowed it to perfect its flavor and texture. Perfect immediately after release, Spumante Metodo Classico Brut Alto Adige DOC can also age in the cellar for two to three years.

Trento DOC
Trento Spumante Brut "Perlé" is a complex and well-structured vintage sparkling wine, aged on the lees for 60 months. Thanks to its aromas of fruit, flowers, and bread crust and its fresh, dry, rich, and persistent flavor, it has become a symbol of the type and one of Ferrari's most celebrated sparkling wines.
Aromas of berry fruit for a rich and enveloping Trentodoc, a delightful blend of Pinot Noir and mountain Chardonnay. In the glass, the rosy reflections of the bubbles accompany the entire meal. A sparkling wine of great elegance and versatility.
The quintessential Perlé style. Born from a selection of Chardonnay cuvées boasting the greatest aging potential, it captivates with its complexity and refined smoothness. It owes its name to the talent of Giulio Ferrari, who in the early 1900s decided to give this prestigious selection a name that evoked the adjective "sparkling." Trento was then part of the Austro-Hungarian Empire, which is why the Perlé, translated from "perlend," was born.
The House's first and only Blanc de Noirs. This Trentodoc Riserva is the fruit of forty years of experience with a complex and delicate grape variety, Pinot Noir.
The challenge of pure Pinot Noir for the first and only Blanc de Noirs from Ferrari: a vintage wine, the fruit of forty years of research, created with grapes selected from the finest estate vineyards on the slopes of the Trentino mountains. Extraordinarily different and proudly unique.
Grape Varieties: Carefully selected Pinot Noir grapes, hand-harvested in mid-September.
Aging: Over 6 years on selected yeasts from the estate's own vineyards.
Production Area: Vineyards owned by the Lunelli family, cultivated in the highest areas within the Villa Margon, Maso Orsi, and Maso Valli estates, at over 400 meters above sea level.
Appearance: Golden and brilliant. The perlage is extremely fine and persistent.
Color: Clear golden reflections, enhanced by a perlage of rare finesse.
Taste: A great wine with a confident personality and rare complexity, perfectly balanced between fruity and toasted notes, complemented by an intriguing savory finish. On the palate, the elegant creaminess surprises with a dynamic flow that culminates in a captivating and majestic finish.
A grand reserve born from the House's centuries-old tradition, on which the Lunelli family has put their own stamp. This Trentodoc boasts extraordinary structure, made exclusively from Chardonnay grapes from their estate vineyards. A captivating blend of tradition and innovation, it is the only Ferrari wine whose first fermentation takes place in large Austrian oak barrels, as in the days of Bruno Lunelli. The maturation in wood lends body, an intriguing richness of flavor, and a harmonious smoothness.
A champion that exceeds all expectations. A pure Chardonnay, captivating, satisfying, and evocative. A great Riserva, the quintessential icon of Italian sparkling wines, Giulio Ferrari stands the test of time.
2015 HARVEST
The 2015 vintage ensured a warm and dry progression. Good weather accompanied the initial flowering, which then led, thanks to balanced rainfall in the spring months, to regular vine development. The following summer, particularly hot and marked by scarce rainfall, favored the ripening of exceptionally healthy grapes, but also necessitated intervention, especially in the lower-hill vineyards, with irrigation to support the plants. As harvest time approached, the harvest was concentrated in a very short period of time; To confirm that, from a qualitative point of view, the altimetric factor was decisive in defining the value of the grapes, special mention must be given to the fruits of the medium and high hillside vineyards.
2012 was an unusual vintage, with hot months alternating with cold weeks starting in spring. From May onwards, the weather was stable. There were also some summer hailstorms, as well as some very hot August days, which led to the harvest starting on August 21st, an average date. The harvest, completed in a very short period of time, required careful selection of the bunches to ensure the highest quality wines.
The Giulio Ferrari 2006 Limited Edition is an icon of style that, after 16 years of aging in the darkness and silence of the Ferrari cellars, is brought back to light with the 2024 disgorgement.

2006 VINTAGE
An excellent vintage for the minerality, expressiveness, and finesse of the mountain grapes. The prolonged cold winter gave way to exceptionally warm and dry weather between spring and summer. The abundant rains in August replenished the water reserves, which were essential for the grapes ripened at high altitude to reach their best aromatic identity.
The Giulio Ferrari Edizione Limitata 2005 is an icon of style that, after long years of aging in the darkness and silence of the Ferrari Winery, is brought back to light with the 2024 disgorgement. Made from the finest Chardonnay grapes from the Lunelli family's vineyards on the slopes of the mountains surrounding Trento, the Giulio Ferrari Edizione Limitata 2005 offers all its elegance, intensity, and refined aromatic richness. 2005 VINTAGE
The delayed growing season and a hot summer lasting until August culminated in pre-harvest rains, which also resulted in marked temperature swings, ideal for the optimal ripening of the mountain grapes. Although the harvest was quantitatively below average, the quality of the mountain Chardonnay was, however, very good, particularly in terms of the balance between acidity and aromatic character.
Trento DOC 100% Chardonnay Brut Nature Riserva 36 months, capable of expressing the spirit of Trentino through the range of the five senses: from the fine minerality of the aroma, to the smooth rockiness on the palate, up to the touch and sight of a packaging that speaks of the refined complexity of the bedrock that nourished it.
Fermentation takes place in open stainless steel vats for 15 days, with slow maceration using part of the whole grapes. Produced with indigenous yeasts, no chemicals are used at any stage of the process. The freshly fermented wine is placed in steel vats where it matures and slowly absorbs aromas and fragrances from its natural sediment. The wine remains in the barrels for 6 months and is then bottled for the secondary fermentation process. It then ages for 4 months in the bottle, thus preserving all the characteristics of the grape variety. After bottling, the wine is stored in a temperature-controlled environment until it is released for sale.
Franciacorta Brut Nature 1701 is a creamy, dry, and mellow sparkling wine, made using the classic method from grapes grown according to biodynamic principles. Indeed, the 1701 winery, located in the Cazzago San Martino area, holds the record for being the first winery in Franciacorta to be inspired by Rudolf Steiner's biodynamics. The results are truly astonishing, or perhaps simply the worthy consequence of dedicated and loving labor. Over three centuries of history in Franciacorta, with an approach in the vineyard that bans the use of any chemical or synthetic substances, while in the cellar, the base wines are fermented spontaneously and aged on the lees for quite some time. Expressive originality and uniqueness are the cornerstones of the company's philosophy, and in the glass, the wines speak—or rather, tell—story!
The 1701 Brut Nature is a Metodo Classico made from a blend of predominantly Chardonnay and a small amount of Pinot Noir, from vineyards grown in the Franciacorta area. Only four hectares of vineyards are used, where the grapes are hand-selected and harvested, followed by destemming and spontaneous initial fermentation in stainless steel tanks with a pied de cuvée of indigenous yeasts. The secondary fermentation takes place in the bottle, as is standard practice with traditional methods. It ages on the lees for 30 months.
The 1701 Brut Nature reveals a pale straw yellow hue in the glass and an extremely fine and persistent perlage. From the first nose, it unfolds fresh and elegant notes of citrus zest, chamomile, golden delicious apple, and French boulangerie. Great harmony and expressive progression are also evident on the palate. A sip that strikes for its definition and its ability to be both creamy and lively. A transversal bubble, a must-have in your cellar.

Annamaria Clementi Rosé is the ultimate expression of pure Pinot Noir vinified as a rosé, in the Ca' del Bosco style.
The grapes are hand-picked into small crates, coded, and chilled in cold storage. Each bunch is selected by expert eyes and hands, then undergoes a special washing and hydromassage system, using three soaking tanks and a complete drying system.
For destemming, the bunches are transferred to the vat and then dropped by gravity, eliminating traditional pumping systems, which cause skin breakage and unwanted herbaceous notes. This is followed by a brief maceration of the grapes at 14°C to achieve the distinctive deep pink color and the extremely refined and harmonious aromatic profile that characterize the Annamaria Clementi Rosé in the bottle.
All winemaking processes take place in small oak barrels made from selected wood, aged for at least three years, and stored in deep, cool underground cellars. Alcoholic fermentation, malolactic fermentation, and barrel aging last a total of eight months.
Annamaria Clementi Rosé is born from the art of blending base wines from three historic vineyards, selecting only the finest barrels. It is gravity-fed, and a pair of floating tanks transfers the wine by gravity from the barrels to the blending tank. At least another eight years of aging on the lees is required to achieve the aromatic harmony and excellent flavor balance that make Annamaria Clementi Rosé a supreme Franciacorta.
Dégorgement occurs in the absence of oxygen, using a unique system designed and patented by Ca' del Bosco. This prevents oxidative stress and the addition of sulfites, making our Franciacortas purer, more enjoyable, and longer-lived. Finally, each packaged bottle is uniquely marked to ensure traceability.
VINIFICATION
Hand-picked and selected grapes. Alcoholic fermentation takes place in small oak barrels; here, it remains on its lees for another 6 months, also undergoing malolactic fermentation. Only wine from the finest barrels gives rise to Annamaria Clementi. Aged on the lees for more than 8 years.

Franciacorta
Derived from the French concepts of "Blanc de blanc" (wine produced exclusively from white grapes) and "Crémant" (bubbles produced under less pressure, resulting in a very soft and abundant foam), this type of sparkling wine, with its light, fresh, and delicate flavor, was adopted by the Franciacorta Wine Consortium in the 1980s under the name "Satèn," indicating its silky flavor and fresh sensory notes. Contadi Castaldi, a Terra Moretti group company, has made Satèn a true winemaking style, accounting for more than 15% of Franciacorta's total Satèn production, which is covered by the current 80 producers.

Pavia, Easter Eve 572. Alboin, king of the Lombards, managed to enter the city after three years of a brutal siege. The people of Pavia, fearing ruthless revenge, sought to curry favor with the new ruler and offered him gold, jewels, and 12 beautiful virgins. An old baker added a dove-shaped cake to the gifts, begging the king, given the imminence of Easter, to spare the people of Pavia and respect the doves, a symbol of peace. The ruler agreed to the strange request, but soon realized he had been tricked: when he began asking the maidens their names, they all said their name was Colomba. Despite this, Alboin remained true to his word.
This Metodo Classico made from Italian Riesling grapes and aged for nine months on the lees, tells us about the ancient legend. Its golden color intertwined with aromas of rennet apples evokes the 12 virgins, while on the palate, minerality and directness recall Alboino's character: tough, yet ultimately kindhearted. Ribolla Gialla Riserva is a deep, macerated white wine produced by Slavcek, one of Slovenia's oldest and most established wineries. We are in Potok, where Frank and Alenka Vodopivec cultivate with passion and love native grape varieties with great expressiveness and character, such as this unconventional Ribolla Gialla, with its distinctive personality. The vineyards are surrounded and protected by woods and green expanses, caressed by warm sea breezes from the Adriatic during the day, which transform into cooler breezes at night, creating a marked temperature range. The result is intense, juicy, and fresh grapes that yield wines of great character.
Slavcek's Riserva is made from single-varietal grapes that ripen on marly soils, particularly suited to Collio winemaking. The 25-year-old vines are completely free of any chemical treatments; they are respected and managed according to the principles of organic farming, using only natural fertilizers and green manures to nourish the plants. Only in this way will we grow healthy, authentic bunches of grapes that best represent their terroir. After harvesting, the grapes macerate on the skins for 20 days, extracting flavor, depth, and nuance. Spontaneous fermentation occurs in oak barrels, thanks to the presence of native yeasts on the skins. The wine is then aged in new barrels for 24 months before bottling without fining or filtration.
The Slavcek winery's Riserva white wine appears cloudy in the glass, with a deep orange-yellow color that immediately reveals its character and distinctiveness. The aroma is intense and rich; notes of orange peel, nuts, and wildflowers dance harmoniously alongside earthier aromas such as balsamic herbs, resin, and undergrowth. Timorasso, the grapes for this wine come from vineyards located 300 meters above sea level, on calcareous and clayey soils with east/north/west exposure. The temperate climate also contributes to optimal grape yield. After harvest, cold maceration takes place for approximately 45 hours. Fermentation then takes place for 12 months in stainless steel tanks, with the wine remaining on the lees for another 12 months. All production phases are carried out without the addition of sulfites. Bottling and release are carried out 14 months after harvest. Derthona is a fresh and savory white wine, perfect for immediate drinking but can also age in the cellar for approximately 3 years.
Derthona "Sterpi" from Vigneti Massa is a white wine that the skilled, irrepressible, and histrionic winemaker Walter Massa has come to know, appreciate, and define over time, seeking the most intimate expression of the terroir. Where once there were only scrub, now stand rows unique for their soil and climate characteristics.
Derthona "Sterpi" demonstrates the empathy of the talented winemaker, as well as his total immersion in the terroir of origin, expressed through this fantastic wine. The decades-old vines grow at an altitude of 280 meters above sea level, on soils rich in limestone and clay, with a south-southwest exposure. Vineyard management is as respectful as possible of natural cycles, with only essential operations performed. Alcoholic fermentation occurs exclusively with indigenous yeasts in stainless steel vats.

The Selva della Tesa Ca' del Bosco Chardonnay is made from organic Chardonnay grapes from eight select vineyards and is a wine that expresses the power and elegance of a unique terroir. Aged on the lees in barriques enhances its complexity and structure, creating a wine with great personality.

Aged on the fine lees for approximately 12 months. Blended in stainless steel and subsequently aged in bottle.
It has a direct connection with its variety, Turbiana, a native grape.
Intended for consumption during the vintage, it expresses its best qualities many years after bottling. In its youth, it is fresh, linear, and endowed with great
finement and elegance, with delicate notes of white and balsamic flowers, hints of apricots, and
almonds. Time allows it to evolve, expressing its
mineral notes with greater determination. It acquires its complexity with hints of iodine, spices, and candied fruit.

accompanied by lively and exuberant acidity.
Grape Varieties
Vermentino, Viognier, Ansonica
Climate
The 2024 vintage was characterized by cool weather with
rainfall until June, while the summer was
characterized by dry and generally hot weather.
Budbing was regular, while rain and low
temperatures in May and June caused a delay in
flowering and fruit set. During September, rain and
excellent temperature variations between day and night favored the
maintenance of the grapes' aromatic and flavorful freshness. The
harvest for Vivia began with Viognier in the first week of
September, continued with Vermentino, and concluded with the
Ansonica harvest in the penultimate week of the month.
Vinification and Aging
Upon arrival at the cellar, the grapes were softly pressed and
vinified separately, so as to enhance the characteristics of
each variety. The resulting must was brought to a temperature of
10°C for approximately 24 hours to promote natural
clarification. It was then transferred to stainless steel
tanks, where alcoholic fermentation took place at a controlled
temperature of 16°C. Vivia aged briefly in stainless steel
in contact with its own yeasts for approximately 3 months before being bottled
in January 2025.
Intense straw yellow with golden crystals. Citrus and tropical aromas with hints
of wildflowers, mint, and sweet spicy notes. The palate is powerful, long-lasting
generosity, finely balanced by a long, savory, slightly bitterish finish.
Cryomaceration, then stainless steel and small oak barrels.
Crushed grapes, must in contact with the skins for 2 hours, soft pressing, natural
cold decantation, fermentation in barriques with battonage, extensive time on the lees.
Golden yellow in color. A wine with a distinct minerality and distinctive balsamic notes reminiscent of the essences of our Mediterranean scrub, primarily thyme and rosemary, which gradually give way to ripe fruit. Long finish.
Bramito comes from the vineyards of the ancient Castello della Sala, a few kilometers from
Orvieto. Chardonnay, a variety that thrives in this particular terroir, features soil
derived from fossil sediments with clay infiltrations, an expression of marked
minerality and elegance. The must, along with the skins, from the crushing and destemming of the
bunches, was cold-pressed at 10°C and macerated to extract the substances responsible
for the future wine's aromatic and flavor profile. The musts were transferred in varying percentages
to wood, undergoing malolactic fermentation and stainless steel at 16-18°C, before being blended.
Bright yellow in color with greenish reflections. A complex and fresh bouquet with delicate
aromas reminiscent of tropical fruits, pineapple, citrus, a hint of hazelnut butter, and
vanilla. It is a wine with good structure, elegance, and minerality that expresses itself with a
fresh and balanced acidity, well-blended with delicate fruit notes.
The name celebrates the Monaldeschi della Cervara, a historic family that owned the Castello della Sala in the 16th century. It was born from the desire to create a white wine capable of withstanding
long aging. It is one of the first Italian white wines to undergo malolactic fermentation and ageing
in barrique. Chardonnay grapes blended with a small amount of Grechetto.
The Cervaro della Sala captures all the magic and complexity of these places, their history
and their love for wine. A deep straw yellow in color, it is structured, elegant, and has a

pears, and acacia flowers, well-blended with hints of vanilla, sweet notes of butter, and hazelnuts.

Verdicchio dei Castelli di Jesi DOC Classico Superiore – 100% Verdicchio
Created to enhance and preserve the qualitative and historical value of 4 hectares of old vines
cultivated on the Montecarotto estate. The unique location and the excellent balance between

native yeasts and then in the bottle, gives this Verdicchio cru
fullness and character.
Bright golden yellow, the nose offers a broad bouquet of broom, chamomile, ripe
apricot, pineapple, and peach with pleasant hints of wild mint, sage, and hazelnut.

that stands out for its freshness and minerality, notes that make it incredibly
easy to pair with a variety of foods and recipes.
Golden yellow in color, the nose reveals persistent aromas of wild flowers and aromas of yellow
flesh fruit. On the palate, it expresses a good dose of freshness and savory flavors that balance
a pleasant softness; the finish is dry and intensely fruity.

light sweet spices. On the palate, the wine reveals its younger side, fresh with a
pleasantness that well supports the ripe yellow fruit and the sweetness released
by the notable alcohol content.

The selection of noble grapes, the pursuit of the right level of freshness and humidity, combined with the
passage of time, ancient secrets passed down by local winemakers, and cutting-edge
production techniques give rise to extremely high-quality wines, esteemed throughout
the world. The overripe grapes are harvested by hand and arrive intact in the cellar.
After gentle pressing, the free-run must, after cold static clarification and inoculation
with selected yeasts, ferments at a temperature of 12°C for approximately 3 months in
oak barriques. It has a deep yellow color with golden highlights. The aroma is reminiscent of apricot
and broom flowers, with hints of exotic fruit. The palate is soft, dense, and

A small museum island in the Marsala lagoon, a unique site.
A marine ecosystem created by the English in the early 19th century.
Trained as bush vines, organically managed, and non-irrigated because
the vines draw water from the seabed with their roots.
The grapes are harvested in small sheds and transferred to dry land on boats.
Historically a grape used for its acidity and productivity, Carricante is
perhaps today one of the most interesting and multifaceted varieties yet to be
discovered. Minerality, sulfurous notes, and hints of hydrocarbons with aging. It is an expression of the
verticality of the wines of the Volcano. A wine that reflects the nature of its terroir, Etna.
Three glasses of Gambero Rosso. The white Favinia La Muciara is a wine born in the sea.
The vineyards are located on the island of Favignana, practically at sea level.
A marine habitat of rocks and earth overlooking the Trapani coast, a truly unique
exception that yields grapes with special qualities. In the glass, it reveals itself thanks to
a marked salty sensation, detectable from the very first moments on the nose.
Grillo, Zibibbo, and Catarratto. The grapes of these three varieties are grown in a terroir that is
very harsh: the Calamoni vineyard on the island of Favignana.
An extremely challenging area for viticulture, to say the least. The vines grow at sea level,
only 10 meters away, and are rooted in a sandy, calcareous subsoil,
characterized by tuff rock outcrops. Once harvested, the grapes are gently pressed
and then fermented in stainless steel for 20 days. The wine then ages in stainless steel on its fine lees for 6 months. Visually, it displays a
golden color, not too intense. The nose is dominated by complex and layered sensations,
starting with marine and iodine notes, then moving towards floral and fruity aromas.
On the palate, it is medium-bodied, creamy, and enveloping, with a pleasantly fresh finish,
characterized by a distinctive, slightly smoky aftertaste.

savory finish. On the palate, it is rich, long, slightly savory, and characterized by a

Cascina Gilli's Chiaretto Lirico has been produced since 2016 from Freisa, blended with a small amount of Piedmontese Bonarda (approximately 15%). Reviving historic grape varieties such as Freisa, Malvasia di Schierano, and Bonarda, and enhancing the terroir's distinctive character with its Barbera and Nebbiolo expressions: these are the goals that have always characterized Cascina Gilli's production venture, begun in 1983 by Gianni Vergnano. The vineyards are located at an average altitude of 350 meters, on characteristic gray-blue clay marl soils. Following a very brief maceration phase, fermentation is slow and at low temperatures, extracting all the fruity and floral aromas. The slight liveliness is due to the wine's natural refermentation in pressure tanks, initiated with the addition of a small amount of sweet wine.
Cirò Rosato Scala is a wine produced with Gaglioppo grapes, a native Calabrese variety, in Cirò Marittima, Calabria, by the Scala family winery, located in a splendid old farmhouse surrounded by vineyards. Rosa dei Frati is the graceful rosé created by the Ca' dei Frati winery. Here, the Del Cero family has been dedicated to producing quality wines since 1939: they like to call themselves "wine artisans" because they put care and attention into every bottle. Rosa dei Frati is a high-quality Chiaretto del Garda, perfectly embodying the traditional graceful, fresh, and gentle wine enjoyed carefree on the southern shores of Lake Garda.
Its distinctive character is based on a production and stylistic technique, developed over time on the Garda Riviera and the Valtènesi hills, which requires the skins of Groppello, Marzemino, Sangiovese, and Barbera grapes to remain in contact with the must for only a specific period of time. Also known as "the wine of a night," it owes its unmistakable delicate pink color and floral bouquet, made unique by the intriguing aromas of berries and wild strawberries, to the skilled human ability to capture the fleeting moment.
Rosa dei Frati enriches the sensory experience on the nose with notes of hawthorn, green apple, wild cherry, and white almond. On the palate, it surprises with its authoritativeness: it remains fresh and delicate thanks to the pleasant acidity that defines its carefree drinkability, yet at the same time punchy and capable of being a versatile protagonist of the table in its own right.
Marisa Cuomo's Costa d'Amalfi Rosato 2020 is a DOC rosé produced in Campania, in the Amalfi Coast area. This typical Alto Adige red wine, fruity and aromatic, is made from grapes of unusual size for the vines.
As the name suggests, the grapes come from vines that are some over 80 years old.
The label is a combination of terroir and bottle. Indeed, in individual areas near Breitbach, a hamlet in the municipality of Kurtatsch where most of our Schiava originates, imposing cypress trees grow in the middle of the vineyard.

Schioppettino perhaps owes its name to the distinctive crispness of its grapes, or, according to others, it could derive from the distinctive "schioppettio" (chipping) that could be perceived on the palate when it was once produced as a lightly sparkling wine. This native grape, grown primarily in the Prepotto area of Udine, produces a red wine with a unique and rare character. It grows in a particularly fertile terroir, with an ideal climate, tempered by the Julian Prealps, which shelter it from cold northerly winds, and by its proximity to the Adriatic Sea. Its distinctive bouquet of raspberry, blueberry, and wild blackberry develops with age, revealing increasingly intense notes of black pepper. A great Friulian red, a wonderful rediscovery of an ancient and forgotten grape variety.
A very intense ruby color, the nose is complex and concentrated, with hints of red fruit, small berries, ripe plum, black cherry, and spices. On the palate, it is typical, powerful, elegant, and balanced, with a ripe cherry finish.
Barbaresco Gaja is produced following rigorous selections of grapes from 14 different vineyards located between Barbaresco and Treiso. The Winery
Founded in 1859 by Giovanni Gaja in the Langhe, the Gaja winery is today a benchmark in Barbaresco production. Passionately led by Angelo Gaja and his children, Gaia, Rossana, and Giovanni, the company stands out nationally and internationally for its innovative production techniques, while never losing its connection to tradition and the terroir, one of the most suited to excellent viticulture.
Teroldego is the symbol of Trentino winemaking, known in ancient times as "the gold of Tyrol." Indeed, among various hypotheses, its name seems to derive from Tirolo, the borderland where it has always been grown. It is a native red grape considered the ancient king of the region, as its presence is documented as early as 1300 in the Piana Rotaliana, an alluvial area where it is still concentrated, located on the northern border with Alto Adige. Deep, dark red in color, it is characterized by a bouquet of wild berries, accompanied by spicy and balsamic notes. On the palate, it is meaty, rounded, and enveloping, and pairs perfectly with traditional Trentino dishes and beyond: cured meats, meats, and aged cheeses. The red nectar of Trentino, the pride of the region.
First vinified with the 1975 harvest, it is intrinsic to the local farming tradition, where it has always been produced. Commonly known as "burdonsì magher," it is further evidence of the area's authentic historical vocation for the production of red grapes. Originally named Franciacorta Rosso DOC, it was later renamed Terre di Franciacorta and then Curtefranca Rosso. With the 2016 vintage, it was renamed Corte del Lupo. These two terms are beautifully captured on the new label, which captures the essence of the terroir and validates Ca' del Bosco's winemaking quality: the vineyard, the Court, the embrace of the forest, and the wolves, faithful guardians of the estate.
Corvina 70%, Rondinella 25%, and Molinara 5%
Masi's Amarone Classico "Costasera" is unequivocally recognized
as a benchmark for this type of wine, if not among the
great Italian reds. Amarone Classico is obtained by the technique of
appassimento (drying) the grapes during the early winter months, a technique now a hallmark of the
winery thanks to the considerable research carried out by its technicians. This involves the bunches
being delicately laid out in traditional drying rooms on bamboo racks,
which ensure greater aeration between the bunches. This ancient
technique ensures that the grapes optimally concentrate sugars and ideal substances and
evolves their aromatic characteristics. When the fruit is deemed ready,
they are pressed and alcoholic fermentation begins, taking place slowly and
for a long time at the naturally low temperatures of the winter months. The resulting wine
ages for 24 months, mostly in Slovenian oak barrels.
Masi "Costasera" is an intense ruby red, dense and oily. On the
nose, captivating notes of almost cooked fruit emerge, with some nuances
almost toasted, subtly spicy. On the palate, it is balanced yet at the same time
intoxicating, with ever-present tannins revealing juicy fruit,
finishing richly and persistently. A symbol, proud and exuberant.
Notes of plum and cooked cherry with roasted coffee.
Balanced and rounded, warm, tannic, and fruity.
"Bonacosta" is Masi's Valpolicella Classico.
Simplicity and elegance coexist in Masi's "Bonacosta," which is defined by
finesse and pleasantness. It speaks of everyday life, easy drinking, and fragrant,
with that easily recognizable Venetian accent.
Masi's vineyards are located in the hills north of Verona,
protected by the Alpine chain and benefiting from the lacustrine influence of
Lake Garda. Alcoholic fermentation in stainless steel.
Ruby. The nose is immediately broad and pleasantly intense; particularly notable are hints of cherry and black cherry, notes of vanilla, and hints of chocolate. On the palate, it is assertive, beautifully silky, and long-lasting.
Sassicaia is undoubtedly one of the most famous Italian wines in the world. It comes
from a particularly suitable 75-hectare vineyard, where the parcels have
different characteristics, with limestone formations and a high stone content,
a characteristic that likely gave rise to the toponym "sassicaia." The soils have a west-southwest exposure. Fermentation takes place in stainless steel,
at a controlled temperature, with maceration on the skins for approximately 10 days.
Tenuta San Guido's Bolgheri Sassicaia DOC is aged in
French oak barriques for 24 months, followed by a further aging in bottle.
The wine has an intense ruby red color. On the nose, it expresses
hines of ripe red fruits, berries and cola, aromatic herbs, and toasted
almonds. On the palate, it is austere, rich, and compact. It displays a full body
and good acidity. It progresses to notes of dried fruit, with a
deep, persistent finish.
With an intense ruby red color, Tignanello 2017 strikes the nose with its complexity. Notes of ripe red
fruit such as cherries preserved in alcohol, black cherry, raspberry, and plum alternate with delicate spicy hints of clove
and licorice; sweet balsamic sensations of mint and chocolate complete the complex bouquet. On the palate,
it is rich, enveloping, and vibrant with soft, velvety tannins. The finish is long and persistent, with
the notes perceived on the nose returning.
Morellino di Scansano DOCG is a Tuscan red wine produced in part of the province of Grosseto. It has a ruby red or garnet color with age; the aroma is intense, ethereal, and vinous, with notes of black fruits, morello cherry, and plum; the flavor is warm and dry, not overly tannic.
Intense ruby red with a light garnet hue. Complex aromas appear on the nose, primarily reminiscent of dark, overripe, and jammy berries, then giving way to mineral and spicy notes of licorice and tobacco. On the palate, the tannins, while still energetic, prove well-crafted. The palate is warm and has excellent persistence.
Made from the finest vineyards and carefully selected grapes, the Riserva Villa Cerna is one of the wines that best captures the Cecchi family's connection to their beloved home: Castellina in Chianti. A deep, aromatic expression of dried flowers, red fruit, and spice creates a wine of splendid finesse, playing on the contrast between the acidic backbone and the powerful fruit. A perfect balance capable of evolving over time.

Ermete Medici's Lambrusco Reggiano 'Quercioli' is a sparkling red wine made from a careful selection of Lambrusco Salamino and Marani grapes. Fresh, lively, and very balanced, it conveys fruity and floral notes of raspberry and violet, offering a long, persistent finish. A wine to pair with Emilian cuisine, such as a platter of parmesan and prosciutto, or tortelli with herbs.
For those who love to be amazed by unique and hard-to-imitate wines, this
Phermento is—without apology—the right bottle to choose. Let's start
with the simple things. Phermento by Medici Ermete is a Lambrusco di
Sorbara DOC, dry. But don't expect the classic "Lambruschino"
all color and little value. This, in fact, is a special Lambrusco
produced with the technique of secondary fermentation in the bottle. And it's rosé.
So, careful vinification of the Lambrusco di Sorbara rosé grapes
and secondary fermentation in the bottle, without final disgorgement. The
yeasts used for the sparkling wine remain in the bottle and
continue to work, slowly, until the moment of uncorking.
It's no coincidence that this bottle isn't closed with the classic mushroom-shaped
cork, but with a crown cap that guarantees an
extra seal. It's certainly not a wine destined for long
aging in the cellar, but that said, if we have the perseverance to
buy more than one bottle, every time we decide to uncork it,
we'll discover a slightly different wine. Magic? No, simple
enology! The power of yeasts.
Medici Ermete is a historic winery in Emilia Romagna. Since its inception,
it has set itself an ambitious goal: to produce the best
Lambrusco possible. And it does so consistently, year after year,
harvest after harvest, thanks to rigorous control of the entire
production chain. From the vineyard, one might say, to the bottle, where
it always manages to create fresh, versatile, highly gastronomic wines
with an innovative approach. This means very low yields, well
below the specifications, environmentally friendly viticulture,
and, of course, extremely meticulous winemaking, thanks to constantly updated
equipment. This is how high-quality wines are born, from Lambrusco
to Malvasia. Now in its fifth generation, the
Medici family has managed to expand to almost 80
hectares of vineyards spread across five estates in the most suitable areas for
Lambruco production (four in Reggio Emilia and one in Modena),
but above all, to export its wines to more than 70 countries worldwide.
