The Chardonnay is produced by Tormaresca, the eponymous winery that represents Antinori in southern Italy. Founded in 1998, it comprises two estates: Bocca di Lupo, located in the Murgia Barese area, and Masseria Maime, in the vibrant heart of Puglia, Salento. Antinori's goal is to enhance the Apulian terroir, which, despite having long been among the peninsula's leading wine grape producers, has never fully expressed its identity. By cultivating only native grape varieties in harmony and cohesion with the terroir, the winery has contributed to the region's winemaking renaissance in recent years.
Produced on the Masseria Maime estate, nestled in a swathe of woods and pine forests, the Tormaresca Chardonnay is the result of the winery's attention to detail, enthusiasm, and passion. It is produced with the finest grapes, carefully selected and hand-harvested from the eponymous grape variety. Once brought to the cellar, they are gently pressed without damaging the berries. Before fermentation, the must is cooled and kept at a temperature of 10°C for a day. This results in a natural clarification, preparing the wine for alcoholic fermentation, which takes place in stainless steel tanks at a controlled temperature of 16°C. Before being released, the Tormaresca Chardonnay undergoes a maturation in stainless steel, which continues until bottling and subsequent release. The result is a wine with remarkable freshness and fragrance, unusual for a southern Italian white wine. The characteristic aroma of exotic fruits and the savory character it releases are distinctive features of the Maime estate.
