Polpo alla pignata or 'Octopus with potatoes' is a rich and flavorful main course, typical of the Salento culinary tradition. Its name comes from the special earthenware pot in which it is cooked, called pignata. In this pot, the octopus is slowly cooked in its own juices along with potatoes and tomato pulp, allowing it to release all of its flavor.
